Vegan Caramel Slice

Oh caramel slice! A mouth-watering treat that everyone loves. Shop bought or even traditionally homemade caramel slices are so decadent and delicious, but not to mention also incredibly high is fat and sugar! So I wanted to create a caramel slice that was actually pretty healthy. A caramel slice where you can enjoy more than one piece (or two, or three!) without feeling weighed down and guilty!
So here you have it! Vegan Caramel Slice that is low in fat and NO refined sugar! Wow!

Vegan Caramel Slice
Makes about 8-9 pieces
Ingredients
Base:
1 cup oats
1/3c desiccated coconut
1/2 cup dates softened in boiling water for 5 minutes
water
Caramel:
1-11/2 cups dates softened in boiling water for 5 minutes
1-2tbsp water
1tbsp coconut oil melted
Chocolate top:
3tbsp cocoa/cacao/carob powder (I've only used cocoa, so can't vouch for the others!)
1tbsp coconut oil melted
1-2tbsp water
2tbsp maple syrup, rice malt syrup or any other syrup sweetener (alternatively you can just melt 70% or higher dark chocolate- but that won't be low fat!)
Method:
1. To make the base, add the oats to a food processor and process till you get a flour consistency, then drain the dates and add to the oats, along with the coconut. Process till you get a dough ball, add water if not combining. Scoop dough out into a dish lined with baking paper, press down firmly and put this base in the freezer while making the caramel.
2. To make the caramel. drain the dates and add to a blender along with the water and coconut oil. Blend till you've reached a thick consistency, with no lumps. Pour this on top of the prepared base and put it back in the freeze. Allow to freeze for 2 hours.
3. Once the caramel layer has firmed up, make the chocolate top. Mix all the ingredients together until you have a thick chocolate sauce-like consistency. Pour this over the caramel and put this back in the freeze for 2-3hours or until firm. 
4. Cut up your delicious caramel slice and savour every bite!

This truly is so so good!
