Raw vegan caramel slice

So I'm back with a new and improved caramel slice!! This one is so rich and decadent and the most amazing dessert to share with your family and friends. . . or eat on your own (I won't judge you!)
I don't tend to have a lot of raw desserts, mainly because I'm not talented enough to make them nor can I afford to buy them often! But I LOVE raw desserts! They are so delicious right?! If you're like me and want to make delicious desserts quick and easy then you will love this recipe! It is honestly so simple to make, but still just as good!!
If you have a sweet tooth (which I most certainly do) then you truly will enjoy this! Best of all this is totally healthy too! Vegan, refined sugar free, gluten free and best of all, delicious!!

Vegan Caramel Slice
Ingredients
Base
1 cup almonds
1 cup chopped dates
1 tbsp coconut oil
1/4 c coconut
Caramel 
2 c dates
2 c boiling water
1 tbsp maple/agave syrup
1 tbsp coconut oil
Chocolate topping
1 tbsp cocoa/cacao/carob powder (use whichever you prefer)
1 tbsp coconut oil
1tbsp maple/agave syrup
1-2tbsp water
Method:
1) Before making the base, soak your dates for the caramel in boiling water for about 10 minutes.
2) Add all your base ingredients into a food processor and whiz for 2-3 minutes or until everything is combined but still chunky. Remove and press into a tin lined with baking paper. Store in the frudge while making the caramel.
3) Next make the caramel. Drain the soaked dates- they will be very soft now- and add to the food processor with the maple syrup, coconut oil and 3-4tbsp water. Process until smooth, creamy and thick. Spread the caramel on top of the prepared base and set in the freezer for 10-12 minutes.
4) Lastly make the chocolate. Mix all the ingredients together with 2-3 tbsp water, mix until you have a melted-chocolate-like consistency. Pour this over the caramel and spread evenly.
5) Store this in the fridge for 1-2 hours to allow to set then slice and eat!

Note: This will need to be stored in the fridge as the chocolate will melt
