Ginger Slice is a baked treat that I loved when I wasn't vegan, and I used to make it quite often! It was actually surprisingly easy to veganise the traditional recipe, and I actually think it tastes a lot better! This is the first time I've made this, but it turned out super well!

Ginger Slice
Ingredients
2 cups plain flour
1/2 cup sugar
2 tsp ginger powder
3/4 cup oil (canola, coconut)
1/3 cup plant mylk (I used soy)
Icing
1 1/2 cups icing sugar
1 tbsp ginger powder
1/4 cup water
Method:
1) To make the based, simply mix together all the dry ingredients, then add the wet and mix fully to combine, to form a thick dough. Press into a loaf tin, and bake at 180 degrees celcius for 15-20 minutes or until the top is brown. Remove and allow to fully cool.
2) To make the icing, mix together the icing sugar and ginger powder. Next add the water slowly, and mix until you form a thick paste. Spread onto the base, and allow to stand for 2-3 hours or until icing has hardened.
3) Slice and serve!
My first time making a vegan ginger slice was a success! This is so so yummy, and I cannot stop eating it! Hope you give it a try!
