Vegan Chocolate filled Peanut Butter Cookies

That title is a bit of a mouthful, but trust me, these cookies are soooooo good!! Creamy and delicious chocolate ganache filled inside a crunchy yet soft and yummy peanut buttery cookie. Mouthwatering!

Rainy sundays are the best for baking, and later you can sit back with one of these warm and delicious cookies, a mug of soy hot chocolate and a good movie or book. Literally perfection!

These cookies are perfect to share with family and friends, take on picnics or functions, or simply to eat at home in you pjs! Its up to you!

Vegan Chocolate filled peanut butter cookies
Ingredients
Chocolate filling
1/2 cup chopped dark chocolate
1/2 coconut cream
1 tsp vanilla essence

Cookies
1/2 cup vegan butter soften
1/2 sugar + 1/4 cup extra
2/3 cup peanut butter (crunchy or smooth)
1 1/2 cup flour
1/2 tsp baking powder
1 tsp vanilla essence
3 tbsp water or soy milk
3 tbsp apple sauce

Method
1. Firstly make the chocolate ganache. Start by placing the coconut milk and vanilla essence in a saucepan over medium heat. Allow it to start boiling, and leave to 2-3 minutes, stirring occasionally. Place the chopped dark chocolate in a bowl, and pour the hot coconut milk over it. Allow to sit for 2 minutes, then fold the milk and chocolate together until fully combined. Place in the fridge to set.
2. Next start making the cookies! Mix together the vegan butter, sugar, and peanut butter together until creamy.
3. Add the soy milk/water, applesauce and vanilla essence and combine well.
4. Add the flour and baking powder and fully, so your mixture is thick but still moist.
5. Add the 1/4 cup sugar to a plate. Start by taking tablespoonfuls of dough and rolling in your hands- the mixture will be slightly sticky- that's okay. Roll the dough in the sugar and place on a sheet of baking paper. Continue with the rest of the mixture.
6. After you've made cookie balls with all the mixture, take a round edge- spoon, your knuckle or the end of a knife (works perfectly!), make a medium sized hole in each cookie.
7. Bake cookies are 180 degrees C for 15-20 minutes or until lightly browned.  Remove and allow to cool for 20 minutes. Press into the holes again, as the baking process might have caused them to deform.
8. Spoon the chocolate filling into the holes, and smooth over with a spoon.


There you go! You are left with perfectly delicious chocolate and peanut butter cookies!! SO SO YUM! I'm so happy with how these turned out!
