Vegan chocolate lamingtons

Hey all!! Today I am coming to you with a super duper delicious recipe!! Before I went vegan, I used to LOVE  Lamingtons, and I haven't had one in almost 3 years!
So today I decided to be a bit creative and create my own vegan version of an old fashioned favourite! They turned out amazing! They taste pretty much how I remember Lamingtons to taste, possibly even better! The sponge is so fluffy and yummy, and the chocolate coating is rich and decadent! Def a treat that will go down well this summer!


Vegan chocolate lamingtons
Ingredients
Sponge
1 3/4 cup self raising flour
1 cup sugar
1 tsp baking powder
1 cup soy milk
1 tsp vanilla essence
1/2 cup vegan butter/margarine softened
1 tbsp white vinegar

Coating
1/2 cup icing sugar
2 tbsp cocoa powder
1/2 tsp instant coffee powder
pinch of salt
1/3 cup soy milk
1 tbsp vegan butter
1 tsp hot water
desiccated coconut
Method
1. For the Cake: add the vegan butter and sugar to a bowl and mix together until thick and creamy. Then add the vanilla essence, vinegar and soy milk and whisk to combine. Add in the dry ingredients and fold together till you have a silky and creamy batter.
2. Pour the cake into a square or rectangle baking tin, lined with baking paper, and place in an oven preheated to 180 degrees C. Bake for 20-25 minutes. Poke with a skewar to ensure it is cooked through.
3. Remove and allow to fully cool. When cool, cut into squares.
4. Next make the chocolate coating: whisk all the coating ingredients in a large bowl. Make sure to whisk thoroughly so there's not butter chunks.
5. Lay out the desiccated coconut on a plate, then take a square of sponge, coat fully in the chocolate, then roll in the coconut until covered. Repeat will the rest of the sponge squares.
6. Place in the fridge for 15-20 minutes to set. Then eat yo heart out!!!

Store remaining (if there are any lol!) in an airtight container in the fridge.
