Vegan peanut butter swirl brownies

Friends, today I have an epic recipe for you! A totally rich, decadent and fluffy vegan brownie with a hit of peanut butter! If you, like me, think peanut butter and chocolate is one of the best combos ever, you will loveeee these!

This recipe is so so easy, can be made in 1 bowl, and takes just 25 minutes to cook! Literally as easy as it gets! Gone are the days when you need eggs, milk and butter to bake, we're in the midst of a vegan revolution, and if you still believe vegan baking can't be a thing, you seriously need to get with it! Make these gems for any occasion, and I guarantee that you're friends and family will love it!

Peanut butter swirl brownies (vegan)
2 cups plain flour
1 tsp baking powder
pinch of salt
3/4 cup cocoa powder
1 cup white sugar
3/4 cup packed brown sugar
3/4 cup oil
1 tsp apple cider vinegar
1 1/4 cup soy milk
2 tbsp peanut butter + 1 extra tbsp
Method
1. Add all the dry ingredients into a large bowl and fold together.
2. Next add the oil, soy milk, apple cider vinegar and 1 tbsp peanut butter and mix together well- add more soy milk if the batter is very thick.
3. Pour the brownie batter into a large tin lined with baking paper. Soften the 2 tbsp peanut butter in the microwave if its very thick, then dollop teaspoonfuls over the batter. Take a knife and swirl it around.
4. Bake at 180 degrees C for 25-30 minutes or until skewar comes out clean.
