Vegan sugar donuts

Hey guys!! Today I have a super delicious recipe coming to you! Who can resist a fluffy, thick and homemade donut full of sugary goodness! Not me, that's who! And while yes, these donuts are definitely not healthy, remember that life is all about balance and moderation, and a donut or two ain't gonna hurt you! These are totally delicious with some raspberry jam or vegan whipped cream!

Vegan sugar donuts
1/3 cup vegan butter/margarine
1/2 cup soy milk
2 tbsp vegetable oil
2 1/2 cups plain flour + extra
1/3 cup caster sugar + extra
1 tsp baking powder
Oil for frying
Method
1. Over a saucepan on medium heat, mix together the margarine/butter, oil and soy milk until butter is fully melted.
2. In a large bowl fold together the flour, baking powder and caster sugar.
3. Mix the wet into the dry until you have a thick dough, add more flour if it is quite sticky.
4. Place the dough on a floured surface. Taking about 2 tablespoon of the dough mixture, roll the dough out into a log shape, and then connect the two ends together to create a donut shape with a hole in the middle. Repeat with the rest of the dough.
5. Heat about 2 cups of oil in a deep saucepan until very hot. Place donuts into the oil and fry for 3-4 minutes on each side- make sure to turn down the a bit so the donuts don't remain uncooked from the inside.
6. Roll each donut in caster sugar after fried.
Serve with some raspberry jam or vegan whipped cream!

Notes:
- I recommend making smaller donuts so they cook easily on the inside.
- Try not to leave donuts in the oil frying for too long, as they will turn out crispy instead of fluffy (still good though!).
- Be careful with the hot oil
