choc chip almond bars (vegan and GF)

If you, like me, loveee chocolate, then you are going to love these choc chip almond bars! They are so thick, and chunky, made with oats, almonds and flaxseeds, this recipe is vegan and gluten free, and a delicious and healthier alternative to the usual sugar-laden treats! The almond meal and oats are so so good together, and give these bars a fantastic nutty taste! This recipe is low in sugar- mostly date sweetened, and also low in oil, so makes a great alternative to take to work, school, uni or to give to friends, family or for the kids!

Choc chip almond bars
Makes 8 bars
Ingredients
2/3 cup almond meal
1 1/4 cup oat flour (ground oats in a blender)*
2 tsp flaxseed
1 tsp baking powder
1/2 date paste- soak dates in boiling water for 5 minutes, then blend until creamy.
2 tbsp raw sugar
1/4 cup coconut oil
1/4 soy milk*- or use other dairy alternative milks
1/2 chopped dark chocolate*
Methods
1. Mix together the almond meal, oat flour, baking powder and flaxseed in a bowl.
2. Add all of the wet ingredients and fold to combine- if the mixture is a bit dry, add splashes of soy milk.
3. Fold in the chocolate chips.
4. Press into a loaf tin lined with baking paper, and bake at 180 degrees C, for approximately 30 minutes or until brown on top, and firm to the touch.
5. Remove, and allow to cool for 10 minutes!

* check that these ingredients are gluten free first (depends on brand)

There you have it! This recipe is so so easy! Can be whipped up super quickly, and your family and friends will love them!
