homemade vegan protein bar


If you like me, love a protein bar here and there, then you will love this recipe! I personally find, that the healthy vegan protein bars taste pretty awful, and the ones that do taste good are so full of refined sugars as well as being like 100 ingredients long, right! 

Protein bars are also not cheap, and you can be paying up to $50 for a box of bars! Don't get me wrong, therefore are definitely some good brands out there, but to save money, and know what is in your bar, then making your own is the best option! 

I hope you give these a try, they are truly delicious, and packed with healthy ingredients!

Vegan protein bars 
Makes 8 
Ingredients
1 cup oats 
2 scoops protein powder of choice 
1 1/2 cup dates soaked in boiling water for 5 minutes 
1/4 cup soy milk
2 tbsp coconut 
2 tbsp peanuts 
1/2 cup peanut butter
2 cups rice puffed cereal
3 tbsp date paste or maple syrup
200g dark chocolate 
Method
1. In a blender, blend the soaked dates, with the milk until creamy. Set aside 3 tbsp for the next layer.
2. In a blender blend the oats, protein powder, peanuts and coconut, and place in a bowl.
3. Mix together the oat mix and the date paste until you have a thick dough. Press into a tray lined with baking paper and place in the fridge. 
4. To make the next layer, mix the 3 tbsp of date paste (or maple syrup) with the peanut butter in a pot over medium heat until the peanut butter starts to melt. Add the puffed cereal, remove from the heat, and mix well to fully combine. 
5. Pour over the oat layer, and press firmly down. Set in the fridge for up to 2 hours. Remove and slice into squares
6. Melt the dark chocolate and coat each square in the chocolate. Set in the fridge for 1 hour. The bars will have to be stored in an air tight container, and will last for around 4 days.
