vegan ginger loaf


I absolutely loveeeee the taste of ginger, it definitely has to be one of my favourite spices! And I swear there is nothing like the smell of a ginger loaf baking, it smells so homely and cosy! If you are coming into the autumn-winter season, a slice of this loaf with some tea or coffee would be a perfect way to start or end the day!

This loaf is filled with triple ginger! Ginger powder, paste and crystallised, giving it an amazing ginger taste- which I love! The ginger flavour is also just perfect, not too intense or strong at all! However, if you are an avid ginger lover feel free to add a touch more ginger powder, for a more intense flavour!

The ingredient list may look lengthy, but I promise that all the ingredients are super simple, and easy to find it any supermarket! And this recipe is so dang simple, it will take you less than 15 minutes to put together!

Vegan ginger loaf
Ingredients:
1 1/2 cups plain flour
1/2 cup wholemeal flour
1 tbsp. ginger powder
2 tsp baking powder
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 tsp cinnamon
pinch of all spice powder
1 cup soy milk
1/2 cup oil
1/4 cup water
1 tbsp apple cider vinegar
1 tsp ginger paste
2 tbsp chopped crystallised ginger
Method 
1. Start by mixing all of the dry ingredients together in a bowl.
2. Fold in all the wet ingredients- adding the crystallised ginger last. If the mixture is quite thick, add a few extra splashes of soy milk or water.
3. Pour into a tin lined with baking paper, and bake at 180 degrees C for 40- 45 minutes.
4. Ensure it is fully cooked by checking with a skewer.
5. Remove, allow to cool, and enjoy!!
