vegan and gluten free tofu meatballs

Hello! Can we believe that there is less than 3 months of this year left! Honestly do not even know where the time has gone!

Today I am coming to you with a super delicious, easy and healthy recipe that you can make for you family and friends, even if their not vegan! You may surprise them! The good news is that meatballs can taste just as good without the meat, and are actually healthier too!

This recipe is so easy to make, with super simple, affordable ingredients that can feed a family of four! It yields an amazing, satisfying and delicious meal! Also this recipe can be made gluten free if need be!


vegan and gluten free tofu meatballs
Ingredients 
1 packet firm tofu (300g)
handful chopped fresh parsley
1 tsp turmeric
1 tsp chilli powder
1 tsp each garlic and ginger chopped
1 tbsb bbq sauce
1/2 onion chopped
1/4 cup flour or GF flour
1/2 cup semolina flour or GF bread crumbs
2 tbsp oil

500g jar of tomato pasta sauce
2 cups spinach

250g pasta cooked
Method
1. Start by making the meatballs, place all the ingredients expect the oil and breadcrumbs into a bowl, and mash together full until combined. Roll into balls 12-14 balls, then roll in the semolina flour or breadcrumbs
2. Heat 1/2 the oil in a pan until hot, then place 1/2 the meatballs in (depending on the size of your pan). Fry over medium heat until brown and cooked.
3. Repeat with the rest of the meatballs.
4. To make the sauce, add the sauce into a pan with the spinach and cook until the spinach wilts.
5. Serve the meatballs with the sauce and fresh pasta, and top with more chopped parsley, and even grated vegan cheese!
