Healthy protein oat cookies

When making these cookies I basically just threw a bunch of stuff together and kinda hoped for the best! And the best they are! These protein cookies are the best I have made so far! I always feel like these "healthy" cookies never turn out as good as well, OG cookies with all the vegan margarine/butter and sugar ya know!
But damn. these cookies turned out super good! They are soft, moist and really yum! They are vegan, low in refined sugar and can be made gluten free! The best part is, that this recipe can be made in a food processor, and takes under 10 minutes to prepare!


Healthy oat protein cookies
Ingredients
1 1/2 cups rolled oats
1 ripe banana
2 tbsp brown sugar (optional)
3 tbsp oil
1/3 cup soy milk
1 scoop protein powder of choice- recommend a vanilla or salted caramel (optional)
1/4 cup almond flour
2 tsp baking powder
1/3 cup choc chips
Method
1. Place all the ingredients in a food processor (except choc chips), and processor until fully combined, and the dough is thick.
2. Fold in the choc chips, then roll the dough into balls and flatten, and place on a tray lined with baking paper.
3. Bake at 160 degrees C for around 15-20 mins or until browned on the top and soft to the touch.
