Vegan and gluten free choc chip banana bread

I get asked so often for more gluten free recipes and I am finally delivering! Gluten free baking is not always easy, and as someone who isn't specifically gluten free it can be hard to alter recipes by using gluten free flours! On top of that, to make it vegan also, is an added challenge! But challenge accepted! I am so happy to be finally be sharing a gluten free banana bread recipe! My original banana loaf recipe is one of the most popular recipes on my blog, and my most attempted recipe, so it's about time that I have a GF alternative!


After one failed attempt that left me with a dense, heavy and distasteful loaf, I have finally perfected a super delicious, fluffy and moist version that is amazing! This recipe is also so easy to make and takes less than 15 minutes to prepare!

A key ingredient in this recipe is micro-sliced chia seeds (Mila), which can be purchased from Live Pure! It really combines all the ingredients together, ensuring a fluffy and well-risen loaf! The use of Mila in this recipe also means that eggs can be omitted completely, as well as allows for the reduced amount of oil used! Mila is a combination of 3 different types of chia seeds, that have been micro-sliced (rather than crushed) which preserves the omega-3 oils! It is high in fibre so great for digestion, and supports a healthy heart!


GF and vegan choc chip banana bread
Ingredients
2 medium ripe bananas mashed
1/3 cup soy milk
1/3 cup oil
1 tbsp Mila
1/4 cup water
1/2 cup sugar
1 1/2 cups brown rice flour
2 tsp baking powder
1/2 tsp cinnamon
1 tsp vanilla essence
1 tbsp apple cider vinegar
1/2 cup vegan and gluten free choc chips
Method
1. In a small bowl mix together the Mila and 1/4 cup water and allow to sit for 5 minutes.
2. Meanwhile, in a large bowl, whisk together the mashed banana, oil, soy milk, vanilla, sugar and apple cider vinegar until fully combined. Then whisk in the Mila and make sure everything is mixed together well.
3. Fold in the rest of the ingredients, except choc chips and mix until fully combined. Add a splash of extra soy milk if the batter is quite thick!
4. Fold in the chocolate chips
5. Pour batter into  a loaf tin that is either greased or lined with baking paper, and top with more chocolate chips if you like.
6. Bake at 180 degrees C for 40-50 minutes checking occasionally. Loaf should rise and brown and the top. Insert a skewer to ensure its fully cooked inside.
7. Remove, allow to cool and eat as is, or with some peanut butter!


There is no weird gluten free flour taste in this loaf, which is something I personally notice quite often in gluten free baking!
