vegan choc chip pancakes

Whenever I'm craving a cake-like dessert for breakfast or lunch I always go for pancakes! They are delicious, fluffy and can also be very healthy! Substituting the butter, eggs white flour and refined sugars for healthier alternatives, is so easy, but also makes super yum pancakes! This recipe also includes a healthy chocolate sauce topping, because in my opinion, the toppings are everything!


These are high in fibre, refined sugar free, dairy free, egg free and refined flour free too! These can also be made gluten free, so perfect for everyone!

In these pancakes, I also added, micro-sliced chia seeds from Live Pure. These are high in fibre, contains essential Omega-3 fatty acids, and is a great source of magnesium and phosphorous! Mila chia seeds are also a great replacement to eggs and oil!
Mila was a great egg replacement in these pancakes, making them so thick and creamy!

Vegan choc chips pancakes
Serves 2-3
Ingredients
1 1/2 cup oats ground into flour
3/4 ripe banana, mashed
1 tsp cinnamon
1 tsp baking powder
1 tbsp Mila chia 
2 cups plant milk
1/2 cup choc chips

Chocolate sauce
2 tbsp maple syrup/date syrup
1 tbsp cocoa powder
2-3 tbsp water
Method:
1. Add the mashed banana and plant milk in a bowl and whisk together.
2. Add the dry ingredients, except the choc chips, and fold together to form a creamy batter.
3. Fold in the choc chips. If the batter is quite liquid, allow it to sit for 10 minutes.
4. Heat a pan over medium heat, add oil if necessary.
5. Pour 2-3 tbsp into the pan, cook on both sides for 3-4 minutes until brown.
6. To make the chocolate sauce, mix together all the ingredients! Top pancakes with the choc sauce, sliced banana, berries and coconut or soy yogurt!


Definitely give this recipe a go! It is my go-to pancake recipe, and honestly, I have them for breakfast, lunch AND dinner! They are SO good! Fluffy, soft, and delicious without the unhealthy ingredients! I honestly haven't made "regular" pancakes in the longest time, because they are just so much better!
